1. How did you get into the catering business?
Four years ago I started a concession business, Pizza Pie on The Fly, taking a mobile brick oven to festivals throughout New England offering wood fired pizza. As more and more customers inquired about using our services for private parties we began to take on catering opportunities. After two seasons of catering a half dozen weddings we decided to buy the antique trucks and run Fire & Company as our catering operation (leaving Pizza Pie on The Fly as our concession business).
2. What tips would you offer the bride and groom in relation to making their wedding cuisine personalized for their guests?
Our menu can be extremely customized or can be straight forward. Our typical bride and grooms are looking for a menu that is casual yet presented in a unique, fun and delicious way so when the couple knows how they want their wedding to flow this helps create our strategy. We offer a long service so that everyone can enjoy themselves during cocktail hour, dinner service and late night without feeling rushed to enjoy their meals.
3. What are some great ideas for new and different wedding meals?
A wedding we are working on now for 2015 is all about stations. The wedding is quite large (200 + people) so we are working with the bride and groom to create an atmosphere where everyone isn’t waiting for food. They want their wedding to be very social and interactive so we are setting up different food stations throughout the property so everyone can have enough space to mingle, play yard games, dance and of course…enjoy food! For over three hours we’ll be rolling out wood fired pizzas, wood fired burgers, build-your-own taco’s and passed hors d’oeuvres. The wedding is setting up to be an afternoon of amazing friends, food and great times!
4. What is your favorite dessert?
We offer our signature peanut butter cup s’mores at all catered events. These come after the main course and people absolutely freak out over these! The melted peanut butter cups add something to remember.
5. What is the most popular pizza you make?
Almost all couples want the Salty Tomato to be part of their main course. It’s a white pizza topped with olive oil, mozzarella, tomatoes, fresh basil and sea salt. A slight spin on the classic margherita that everyone loves.
